Oil free vegan Watermelon rind sabzi

Ingredients:-

  • 1 can of garbanzo beans – washed and drained
  • 4-5 cups of cubed watermelon rind (remove the green skin portion)
  • Chilli powder to taste
  • Turmeric
  • Dry tempering – mustard seeds, curry leaves, hing, spilt urad dal
  • Salt to taste
  • Homemade curry powder (more like lentil coarse powder) – optional

Process:-

  • In a pan roast the dry termpering except the hing
  • Then add the beans, rind, hing all the spices, 1/2 cup of water and cook with the lid on
  • At the end add the curry powder or skip it and garnish it with cilantro leaves

Enjoy with brown rice or roti or just by itself with some soy yogurt.
