Oil Free Vegan Cilantro red rice poha

Ingredients:-

  • 1 bunch of cilantro
  • Green chilies according to your preference
  • 5-6 tablespoon of lemon juice
  • 2 tablespoon coconut
  • 1 tablespoon of cumin seeds for tempering
  • 2 medium sized onions finely chopped
  • 2 cups of frozen peas
  • 1 or 2 potatoes cubed
  • 4-5 cups of poha (washed and 95% water drained)
  • Salt to taste

Process:-

  • Wash the poha couple of times, drain the water and set it aside
  • Blend cilantro, green chilies, lemon juice, coconut into a puree and set it aside
  • In a pan dry roast the cumin seeds
  • Then add chopped onions and sauté it for 5-6 minutes
  • Then add green peas, potatoes, cilantro puree, add 1/2 cup of water and let it simmer for 4-5 minutes
  • Add the poha, add salt and gently mix in the poha with the veggies.
  • Adjust for lemon juice if need be.

Enjoy as a snack or breakfast. Great picnic food also.
