Oil Free Collard Potato Sabzi/Curry

Ingredients:-

  • 5 medium sized potatoes – washed and cut into cubes
  • 2 bunches collard greens – washed and finely chopped
  • Chilli powder according to your preference
  • 1 tsp Turmeric
  • Salt to taste
  • Hing
  • For tempering – Mustard seeds, spilt urad dhal, Curry leaves

Process:-

  • In a pan dry roast the tempering ingredients
  • Then add chopped potatoes and collard greens
  • Add rest of the spices, 1 cup of water
  • Cook for 5-10 mins with the lid on – toss every 2-3 mins

Enjoy with roti, yogurt rice or as a side dish with dal.
