Ingredients:-
- 4 pabalano peppers
- 1.5 large white or yellow onions
- 1 pod of garlic
- 1 small jar of compliant salsa of your choice
- 1 can of garbanzo beans
- 1/2 cup of sweet pieces (i basically used leftover pieces after preparing au gratin)
- 1.5 cups of cooked wild rice
- 1 tsp fajita spice blend
- 1 bunch of finely chopped cilantro
- Salt to taste
- Chili powder or cayenne powder according to your preference
Process:-
- Clean the peppers, slit in the center and bake at 400F for about 10 mins or broil for about 5-6 mins. Flip it once in between
- In a pan saute the finely chopped onion and garlic for about 4-5 mins
- Then add the sweet potatoes, garbanzo beans and salsa, cook for another 3-4 mins
- Then add rice, rest of the spices and chopped cilantro. Cook for another couple of mins or so.
- Once the peppers have cooled down, peel the skin of the peppers.
- Stuff the peppers with the stuffing you prepared and bake at 375F for another 10 mins or so.
