Ingredients:-
- 3 cups of whole wheat flour (I used King arthur brand)
- 1.5 tsp active dry yeast
- 1 cup of lukewarm soy milk
- 1-2 cups of lukewarm water. I initially added 1 cup and then added maybe another quarter cup.
- 1/4 tsp black pepper powder
- Finely chopped green chilies according to your preference
- 1 cup of finely chopped cilantro leaves
- 1.5 cups of finely chopped onions
- 3-4 tbsp finely chopped mint leaves. I added dry mint leaves
- 2 sprigs of finely chopped curry leaves
- 1 tsp cumin seeds
- 1 tsp of salt
- 1 tsp of date sugar or maple syrup
Process:-
- Mix and knead all the ingredients (except water and milk) in the Kitchen aid stand mixer.
- Add milk and water as needed to form a soft dough.
- Rest for almost 1hr covered with a damp cloth
- After almost 1 hr softly knead the dough again and then let is sit for another 1-2hr or so.
- Transfer to a baking loaf pan. Lightly brush with plant based milk of your choice.
- Bake at 350F. I baked it for almost 45 mins. Check after 30 mins or so.
- Cool on a cooling rack before cutting into slices.
