Oil Free Vegan Corn Sundal (cooked salad)

Ingredients:-

  • 4-5 cups of frozen corn (large kernels are preferred)
  • 1 large red onion or 2 medium sized red onion
  • Green chillies according to your preference
  • 2-3 tbsp lemon juice
  • Salt to taste
  • 1/2 tsp Turmeric powder
  • Cilantro for garnish
  • For tempering – 1 tsp mustard seeds, 1 tsp urad dhal, 1-2 sprigs of curry leaves

Process:-

  • In a pan dry roast tempering ingredients
  • Then add finely chopped onions and green chilies
  • Add salt and turmeric and 1 or 2 tbsp of water – saute for 4-5 mins
  • Then add frozen corn and cook for another 7-8 mins with the lid on. Add water if needed
  • Once you switch of the flame add lemon juice and garnish with finely chopped cilantro leaves.
