Ingredients:-
- 4-6 medium sized potatoes – cubed (i added 2 purple potatoes)
- 1.5 semi ripe mangoes (as the mangoes in this country are not very sour added 3 or 4 cubes of frozed green mangoes)
- 2 small onions chopped
- 6-7 cloves of garlic finely chopped
- 7-8 chopped baby corn (optional)
- 1 cup of green peas (optional)
- 1 tsp cumin seeds
- 1.5 tsp garam masala
- 1.5 tsp amchur powder (green mango powder)
- 1 tsp coriander powder
- Chilli powder and salt according to your preference
- Pinch of hing
- 1/2 tsp of Turmeric powder
- Chopped cilantro for garnish
Process:-
- Chop all the veggies and set it aside
- Make a puree of mango pieces with water
- In a pan dry roast cumin seeds and hing
- Then add chopped onion and garlic and saute for 3-5 mins
- Then add chopped potatoes, baby corn, green peas
- Add water, mango puree and all spices. Simmer for 10-12 mins (basically till the potatoes are cooked)
- Garnish with chopped cilantro
Enjoy with brown rice or roti.
