Oil Free Vegan Bhutte (Corn) Ka Kees

Ingredients:-

  • 1 tsp of Mustard seeds
  • 1 tsp of spilt Urad dal seeds
  • 1-2 sprigs of curry leaves
  • Pinch of Hing
  • 1 tbsp grated ginger
  • 1.5 packets of frozen corn or 5-6 fresh grated corn
  • 1 tsp turmeric powder
  • Chopped green chilli according to preference
  • 1.5 tsp coriander powder
  • 1 cup of plant based milk (I used soy milk)
  • Water if needed
  • Juice of 1 fresh lime or lemon
  • Salt to taste
  • Garnish options – grated carrots, chopped cilantro, grated coconut

Process:-

  • In a pan dry roast the tempering of mustard seeds, spilt urad dal seeds, curry leaves
  • Then add grated ginger and hing – saute for 1-2 mins
  • Then add caorsely ground corn, green chillis, salt, turmeric powder, coriander powder. Add water if needed
  • Cook for 5-6 mins
  • Then add soy milk and cook for another 4-5 mins
  • Add lemon juice at the end.
  • Transfer into serving bowls and garnish with carrots, cilantro, coconut
