Ingredients:-
- 1 tsp of Mustard seeds
- 1 tsp of spilt Urad dal seeds
- 1-2 sprigs of curry leaves
- Pinch of Hing
- 1 tbsp grated ginger
- 1.5 packets of frozen corn or 5-6 fresh grated corn
- 1 tsp turmeric powder
- Chopped green chilli according to preference
- 1.5 tsp coriander powder
- 1 cup of plant based milk (I used soy milk)
- Water if needed
- Juice of 1 fresh lime or lemon
- Salt to taste
- Garnish options – grated carrots, chopped cilantro, grated coconut
Process:-
- In a pan dry roast the tempering of mustard seeds, spilt urad dal seeds, curry leaves
- Then add grated ginger and hing – saute for 1-2 mins
- Then add caorsely ground corn, green chillis, salt, turmeric powder, coriander powder. Add water if needed
- Cook for 5-6 mins
- Then add soy milk and cook for another 4-5 mins
- Add lemon juice at the end.
- Transfer into serving bowls and garnish with carrots, cilantro, coconut
