Oil Free Vegan Homemade “Maggie”

Ingredients:-

  • 1 large onion (finely chopped)
  • 4-5 cups of veggies (chopped carrots, green peas, cubed potatoes)
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon kitchen kind masala powder (available at the Indian store)
  • 1 tablespoon Chaat masala powder (available at the Indian store)
  • 1 tsp date or raw sugar
  • Chilli powder according to your preference
  • Salt to taste
  • Water according to your preference
  • Brown rice and millet Ramen noodles – 3 or 4 slabs

Process:-

  • Saute chopped onion for 3-5 mins
  • After the onions have sautéed add veggies of your choice- I only added peas and carrots as per the request of my 15yr old
  • Then add water – 7-8 cups (we like it soupy consistency)
  • Once the water starts boiling add the spices and cook for about 5-6 minutes
  • Then add the uncooked noodles and cook till the noodles gets cooked

Serve with your favorite ketchup. We usually have it with Maggie’s hot and sweet sauce
