Oil Free Vegan Sindhi Sai Bhaji

Ingredients:-

  • 1 chopped onion
  • 5-6 cloves of garlic
  • 3/4 inch ginger
  • 1 large potatoes roughly cubed
  • 1-2 cups of chopped eggplant
  • 2 carrots
  • 1 cup of fresh methi leaves
  • 5-6 cups of spinach
  • 2-3 roma tomatoes roughly chopped
  • 1-2 cups of peas
  • Green chillies according to your preference
  • Turmeric
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 1/2 cup of channa dal soaked for at least 30 mins
  • 1 tbsp garam masala
  • lemon juice according to preference
  • salt according to your preference

Process:-

  • In a pan dry roast mustard seeds and cumin seeds.
  • Then add chopped onion, garlic and ginger and sauté for few minutes
  • Add the rest of the veggies, channa dal except spinach and saute for 3-4 minutes
  • Add all the spices, add spinach and water and either pressure cook or cook in a pan with the lid on.
  • Once cooked using a immersion blender blend it coarsely. It is ok to have a few chunks of the veggies.
  • Once it is blended add garam masala and lemon juice and simmer for another 3-5 mins.

Enjoy with roti, or any other cooked whole grain.
