Ingredients:-
- 1 chopped onion
- 5-6 cloves of garlic
- 3/4 inch ginger
- 1 large potatoes roughly cubed
- 1-2 cups of chopped eggplant
- 2 carrots
- 1 cup of fresh methi leaves
- 5-6 cups of spinach
- 2-3 roma tomatoes roughly chopped
- 1-2 cups of peas
- Green chillies according to your preference
- Turmeric
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 1/2 cup of channa dal soaked for at least 30 mins
- 1 tbsp garam masala
- lemon juice according to preference
- salt according to your preference
Process:-
- In a pan dry roast mustard seeds and cumin seeds.
- Then add chopped onion, garlic and ginger and sauté for few minutes
- Add the rest of the veggies, channa dal except spinach and saute for 3-4 minutes
- Add all the spices, add spinach and water and either pressure cook or cook in a pan with the lid on.
- Once cooked using a immersion blender blend it coarsely. It is ok to have a few chunks of the veggies.
- Once it is blended add garam masala and lemon juice and simmer for another 3-5 mins.
Enjoy with roti, or any other cooked whole grain.
