Vegan sugar free Mango Ice-cream

Ingredients:-

  • 2 cups of soaked cashewnuts
  • 10-12 soaked medjool dates
  • 1 packet frozen Indian mango pulp or Kesar mango slices (available at the indian stores)
  • 1 tsp Cardamom powder
  • 4-6 strands saffron
  • Freshly cut mangoes for garnish

Process:-

  • Prepare cashew milk with soaked cashew nuts (soaked for 1-2 hrs), pitted medjool dates (soaked for 1 hr) and 3 cups of water (blend in high speed blender)
  • Then add mango slices or mango pulp, cardamom, saffron blend all the ingredients together
  • Transfer to a container or popsicle cones and freeze for 6-8hrs
  • Serve and garnish it with freshly chopped mangoes
