Ingredients:-
- 1 cup of frozen amla
- Green chillies according to your preference
- 1 small piece of ginger
- 4-5 cloves of garlic
- 2 tbsp besan (I used kala channa besan)
- 5 tbsp soy yogurt
- Water
- Turmeric powder
- 1 tbsp coriander powder
- For termpering – cumin seeds, pinch of methi seeds, mustard seeds, curry leaves, red chillies, hing
- cilantro for garnish
Process:-
- Grind amla, green chillies, ginger and garlic into a coarse puree
- Whisk besan, yogurt, water into a very watery consistency batter
- In a pan dry roast the tempering ingredients, then add besan batter, amla puree, spices and keep simmering on low flame for almost 45mins – 1hr.
- At the end add air fried pakoras and garnish with cilantro.
For Pakoras:-
- In a bowl mix 1 large onion cut in long strips, then add chopped spinach (3-4 cups), spices (salt, hing, turmeric powder, 1 tsp chaat masala, chilli powder, 1 tsp coriander powder, pinch of Baking soda), 5-6 tbsp of Chickpea four/besan, 1tbsp brown rice powder. Keep adding water 1 tbsp at a time till you get a stiff dough.
- Spread it on parchment paper or silicon lining and air fry at 350F for 5-6 mins on each side.
- This can be enjoyed as is with ketchup or added to the Kadhi.
