Oil Free Vegan Minestrone soup in the instant Pot

Ingredients:-

  • 1 zucchini – cubed
  • 1 large carrot – cubed
  • 1 large yellow or white onion – chopped
  • 8-10 cloves of garlic – finely chopped
  • 4-5 cups of chopped spinach
  • 3-4 stalks of celery finely chopped
  • 1 can of kidney beans (washed and rinsed)
  • 2 cans of garbanzo beans (washed and rinsed)
  • 2 cartons of oil free vegetable stock or broth
  • 1 can of diced tomatoes tomotoes
  • 2 tbsp dried basil leaves
  • 2 tbsp dried italian seasoning
  • 1 cup of uncooked macaroni noodles
  • 1 tbsp chillie flakes
  • Salt to taste

Process:-

  • Switch on the saute mode in the instant pot. Once the pot is hot saute onion and garlic
  • Saute onion and garlic for about 5 mins then add the veggies (except spinach) and saute for another 5 mins
  • Add kidney beans, garbanzo beans, diced tomatoes, spices, vegetable stock, add additional water if needed.
  • Switch off the saute mode and pressure cook it for about 8 mins.
  • Let the pressure naturally release and once it releases add the spinach and uncooked noodles. Again pressure cook for 1 min.
  • Again let the pressure release naturally.
