Ingredients:-
- 2 carrots shredded
- 1/4 cup green cabbage cubed
- 4-5 cups of shredded green papaya
- 1 cup of chopped cilantro
- 2-3 cloves of garlic minced
- 1/4 cup of lime/lemon juice
- 3-4 tbsp of soy sauce
- 3-4 tbsp of date sugar or maple syrup
- 1/2 cup of crushed dry roasted peanuts (you can adjust accordingly)
Process:-
- Chop all the veggies and set aside in a large mixing bowl
- Mix minced garlic, lime juice, soy sauce, date sugar – whisk into a dressing
- Add the dressing, crushed peanuts to the veggies. Toss and serve.
- Adjust lime juice and date sugar according to your preference.
