Oil Free Vegan Green Papaya Salad

Ingredients:-

  • 2 carrots shredded
  • 1/4 cup green cabbage cubed
  • 4-5 cups of shredded green papaya
  • 1 cup of chopped cilantro
  • 2-3 cloves of garlic minced
  • 1/4 cup of lime/lemon juice
  • 3-4 tbsp of soy sauce
  • 3-4 tbsp of date sugar or maple syrup
  • 1/2 cup of crushed dry roasted peanuts (you can adjust accordingly)

Process:-

  • Chop all the veggies and set aside in a large mixing bowl
  • Mix minced garlic, lime juice, soy sauce, date sugar – whisk into a dressing
  • Add the dressing, crushed peanuts to the veggies. Toss and serve.
  • Adjust lime juice and date sugar according to your preference.
