Oil free Gluten free Vegan banana bread

Ingredients:-

  • 3 overrippened bananas
  • 1 cup quinoa flour
  • 1 cup buckwheat flour
  • 2 cups date sugar (reduce the quantity if prefer)
  • 1 cup almond milk
  • 2 tbsp flax egg mixed with 4 tbsp water
  • 1.5 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup dried mulberries
  • 1/4 cup chopped nuts
  • 1 tbsp cacao powder
  • 1/4 tsp cinnamon powder
  • 1 tsp vanilla essence
  • Chopped nuts and pumpkin seeds for topping

Process:-

  • Mash the bananas and date sugar
  • Sieve all the dry ingredients and add it to the mashed up bananas
  • Mix the rest of the ingredients (except for mulberries and nuts)
  • In the end add mulberries and nuts mix it to incorporate all the ingredients
  • Top it with chopped nuts and pumpkin seeds
  • Bake at 375f for almost 40 mins

Enjoy it warm with a glass of plant based milk
