Oil free vegan brown rice veggie pancakes (akki roti)

Ingredients:-

  • 4 cups of brown rice flour
  • 1 large carrot – grated
  • 1 large red onion – finely chopped
  • 2-3 tbsp of finely chopped dill leaves
  • 2-3 tbsp of finely chopped cilantro
  • 1 tsp cumin seeds
  • Green chillies according to your preference
  • Salt according to your preference
  • Hot boiling water

Process:-

  • Chop all the veggies
  • In a large bowl add all the ingredients (rice flour and veggies) and mix it
  • Then keep adding hot boiling water little at time and using the help of a ladle keep mixing in all the ingredients. Keep adding hot water till you get a soft (not watery) dough
  • Set aside the dough (with a lid on) for a few minutes.
  • Once the dough has cooled down a bit mix all the ingredients once again (preferrably using your hands)
  • To prepare the roti – on parchment paper – spread some aquafaba, take some dough and using water keep spreading the dough till you get a thin roti.
  • Transfer to hot tawa and cook it on both sides.
  • Serve with any kind of chutney. I served with walnut chutney.
