Ingredients:-
- 4 cups of brown rice flour
- 1 large carrot – grated
- 1 large red onion – finely chopped
- 2-3 tbsp of finely chopped dill leaves
- 2-3 tbsp of finely chopped cilantro
- 1 tsp cumin seeds
- Green chillies according to your preference
- Salt according to your preference
- Hot boiling water
Process:-
- Chop all the veggies
- In a large bowl add all the ingredients (rice flour and veggies) and mix it
- Then keep adding hot boiling water little at time and using the help of a ladle keep mixing in all the ingredients. Keep adding hot water till you get a soft (not watery) dough
- Set aside the dough (with a lid on) for a few minutes.
- Once the dough has cooled down a bit mix all the ingredients once again (preferrably using your hands)
- To prepare the roti – on parchment paper – spread some aquafaba, take some dough and using water keep spreading the dough till you get a thin roti.
- Transfer to hot tawa and cook it on both sides.
- Serve with any kind of chutney. I served with walnut chutney.
