Ingredients:-
- 3-4 small onion chopped
- 8-10 cloves of garlic
- 1/2 inch ginger
- 4-5 roma tomatoes chopped
- 1-2 tbsp poppy seeds
- 3-4 tbsp pumpkin seeds
- 4-5 cups of green peas (bought fresh at costco)
- 3-4 potatoes – chopped in big chunks
- 1 tsp turmeric
- 1.5 tsp cumin seeds
- 1 bay leaf
- 1/2 cinnamon stick
- 1 tbsp garam masala
- 1 tbsp coriander-cumin powder
- 1.5 tsp kitchen king masala
- 1 tsp chaat masala
- chilli powder and salt according to your preference
- Chopped cilantro leaves for garnish
Process:-
- Dry roast onion, tomatoes, garlic, ginger, poppy seeds, pumpkin seeds for about 6-8 minutes – blend into puree with additional water added
- Cut the potatoes into chunks and air fry it at 350F for 4-5 mins
- In a pan dry roast cumin seeds, bay leaf and cinnamon stick
- Then add the puree, green peas, air fryed potatoes, spics
- Simmer for about 10-15 minutes till the raw smell disappears and the veggies are cooked.
- Garnish with chopped cilantro leaves.
Enjoy with roti, brown rice or by itself with some soy yogurt.
