Gluten free oil free vegan Orange cupcakes

Ingredients for the cupcakes:-

  • 1/4 cup – 1/2 cup of freshly squeezed orange juice
  • 2/3 cup of almond or soy milk
  • 2-3 tbsp of orange zest
  • 1 tsp orange extract
  • 1/2 cup of maple syrup or 1 cup of date sugar
  • 1 cup of apple sauce
  • 2tbsp of flax egg – soaked in 4 tbsp of warm water
  • 11/4 cup of almond flour
  • 11/4 cup of oat flour
  • 2 tsp of baking powder
  • 1/4 tsp of baking soda
  • 1/4 cup of orange pieces – cut it into small bits

Ingredients for frosting:-

  • 1/4 cup of raw cashew (soak it hot water for at least 15 mins)
  • 2 tbsp maple sugar or 4-5 dates
  • 4-6 tbsp of orange juice
  • 1 tsp orange extract
  • 1 tsp orange zest

Drain the soaked cashews, add the rest of the ingredients and blend it. Add orange juice till you get the desired frosting consistency.

Process:-

  • Preheat the oven to 350F
  • Mix/Whisk all the ingredients for the cake
  • Transfer into silicon muffin tray and bake at 350F for 15-18 mins (check after 12 mins with the knife insert test)
  • Wait till the cupcakes completely cool down before frosting it.
