Ingredients:-
- 2 medium sized cauliflower – chopped in medium sized chunks
- 2 large purple onion finely chopped
- 2 bunches of green onions – finely chopped
- 1-2 tbsp corn starch or potato starch
- 1-2 tbsp whole wheat flour
- 4-5 tbsp (or slightly more) low sodium soy sauce
- 1 tbsp ginger-garlic paste
- 10-15 cloves of garlic – finely chopped garlic
- 1/2 inch of ginger – finely chopped
- 1/2-3/4 cup of ketchup (no sugar added ketchup)
- 3-4 tbsp of white vinegar
- 1 tsp of black pepper powder
- Chilli powder to your preference
- Kashmiri chilli powder for color
- Chilli sauce
Process:-
- Cut the cauliflower, soak it in water and microwave it for 3-4 mins
- Drain out all the water. Transfer to a mixing bowl – add the starch, wheat flour, ginger-garlic paste, kashmiri chili powder, chilli powder, 1-2 tbsp of soy sauce. Mix everything till the cauliflower is well coated. Air fry for 5-9 mins at 350F. toss it around after 4-5 mins and then air fry again.
- While the cauliflower is air frying, prepare the sauce
- In a pan (use a pan that will easy to toss the cauliflower), saute onion, garlic, ginger, the white portion of the spring onion for 4-5 mins
- Then add soy sauce, chilli powder, ketchup, chilli sauce, vinegar, pepper powder. Also add 1-2 cups of water. Let it simmer for a few minutes. Adjust soy sauce and ketchup according to your preference
- Just before serving add the air fried cauliflower, green portion of spring onion.
Goes great with Hakka noodles or as a appetizer.
