Oil free Vegan Cranberry Masoor Dal (orange lentil)

Ingredients:-

  • 2 cups of washed skinless masoor dal (pressure cook with water)
  • 3-4 stalks of celery
  • 2 small red onions
  • 5-7 cloves of garlic
  • 3-4 cups of raw fresh cranberry (frozen can be used also)
  • 1 tbsp garam masala
  • 1 tbsp kitchen king masala (available at the Indian grocery store)
  • 1 tsp turmeric
  • Chilli powder to your preference
  • Salt to taste
  • 1 tbsp cumin seeds
  • Cilantro for garnish

Process:-

  • Wash the masoor dal and pressure cook
  • In a pan dry roast cumin seeds
  • Next add chopped onions and finely chopped garlic – sauté it for 4-5 mins
  • Then add chopped celery and cranberry – sauté for another 4-5 mins
  • Add all the spices, cooked dal and water to your preferred consistency and let it simmer for 5-8 mins
  • Usually the dal thickens once it cools down hence I usually add additional water while it is simmering
  • At the end garnish with finely chopped cilantro

Enjoy this dal with brown rice, quinoa, barley, roti or as is with some soy yogurt.
