Oil Free Vegan Sweet Potatoes Casserole

Ingredients for sweet potato layer:-

  • 3-4 medium sized purple sweet potatoes
  • 1 medium sized orange potatoes
  • 1 cup of plant based milk (I used almond milk)
  • 1 tsp cinnamon powder
  • 1/4 tsp nutmeg powder (freshly grated would be best)
  • 3-4 tbsp date sugar (add more if you prefer)
  • Pinch of Salt

Ingredients for the top layer:-

  • 3 tbsp old fashioned oats
  • 3 tbsp almond flour
  • 1 tbsp chia seeds
  • 3 tbsp date sugar
  • 1/2 cup Finely chopped pecans
  • 1 tsp Cinnamon powder
  • 1/4 tsp Freshly grated nutmeg
  • 4 finely chopped medjool dates (more if you prefer)
  • 1/4 cup raisins
  • 1 tbsp flax seed powder
  • Mix all the above ingredients

Process:-

  • Bake the sweet potatoes with the skin on at 375F until they are cooked
  • Remove the skin and mash it until it is smooth
  • Add the rest of the sweet potatoes layer ingredients and arrange in a baking tray (smooth it out)
  • In a separate bowl mix all the top layer ingredients and then layer it on top of the sweet potatoes layer.
  • Bake at 375F covered for about 30 mins.

Serve this dish warm.
