Oil free Adzuki beans curry

Ingredients:-

  • 3-4 cups uncooked adzuki beans (washed, soaked in water for 5-6 hrs and then pressure cooked)
  • 2 large red onions (finely chopped)
  • 6-7 cloves of garlic and 1/2 inch of organic ginger (crushed)
  • 5-7 Roma tomatoes (finely chopped)
  • Turmeric powder
  • 1 tsp Kitchen kind masala (available at the Indian store)
  • 1 tsp amchur powder (dry mango powder)
  • 1 tsp anardhana powder (pomegranate powder) – optional
  • 1 tbsp garam masala powder
  • 1 tsp Chaat masala powder
  • 1tsp Chole masala powder
  • Salt to taste
  • Chilli powder to taste
  • Chopped cilantro for garnish

Process:-

  • Wash, soak the beans in water for about 5-6 hrs and pressure cook for 20 mins in the instant pot
  • In a pan dry roast cumin seeds and bay leaf
  • Then add chopped onions, crushed ginger-garlic. Saute it for 4-5 mins
  • Then add chopped tomatoes, add all spices except garam masala and saute it for 4-5 mins
  • Then add the cooked beans, add additional water, add garam masala and simmer for almost 20-30 mins
  • Add finely chopped cilantro as garnish.

Enjoy this with roti, rice or just as is with some chopped lettuce.
