Ingredients for crust:-
- 1.5 cups almond flour
- 1/2 cup brown rice flour
- 1/2 cup tapico flour (might reduce it slightly next time)
- Pinch of salt
- 2 tbsp date sugar
- Water as needed to form a soft dough.
Ingredients for filling:-
- 1 cup apple sauce
- 1 cup date sugar
- 1 cup medjool dates and 1 cup water ( soak for a few minutes and then make a puree with 1 cup water)
- 1/2 cup maple syrup
- 1 tsp orange zest
- 1 tsp vanilla essence
- 1 tbsp flax “egg” soaked in water
- 3 cups toasted pecans (1.5 cups finely chopped)
Process:-
- Mix the above crust ingredients till u get a small dough.
- Set aside covered for about 10 mins
- Then on parchment paper roll it out…I used my fingers and tapped to roll it out
- Transfer to a baking pie dish…using the help of a fork poke holes and bake for 10mins at 350f.
- In a saucepan start cooking apple sauce and date sugar
- Once the sugar melts add the date puree, maple syrup and keep stirring till the raw smell of the date goes away (add 1/2-1 cup of water if needed).
- After about 5mins add orange zest, essence, and soaked flax “egg”…as soon as u add the flax egg the puree will start to thicken…keep stirring it for couple of mins
- Then add roasted chopped pecans.
- Give it a good mix and transfer it to partially baked crust and decorate with the rest of the whole pecans
- Bake the pie at 350f about 30-40 mins…midway I took it out and drizzled couple of spoons of maple syrup on the nuts….
