Ingredients:-
- 3 medium sized red onion
- 3 small roma tomatoes
- 4-5 cloves of garlic
- 1 small sized purple cabbage
- 2 cups of Brown Basmati rice
- 2 cups of green peas
- 1 cup of broccoli (optional)
- 1 tsp turmeric powder
- 1 tbsp biryani masala powder
- 1 tsp coriander powder
- Juice of 1 large lime
- 2 cups of soy yogurt
- Salt to taste
- Chilli powder to taste
- 1 bay leaf
- 1.5 tsp cumin seeds
- 1/2 inch of cinnamon stick
- Chopped cilantro leaves
Process:-
- Wash the rice and soak in water for about 30 mins
- Cut up all the veggies
- In a pressure cooker dry roast cumin seeds, bay leaf, cinnamon stick
- Then add chopped onion and garlic and saute for 3-5 mins. Add a pinch of salt for the onion to release some moisture.
- Next step add chopped tomatoes and saute it for another 3-5 mins
- Next add purple cabbage, green peas, broccoli, and the spices and saute it for 3-5 mins
- Then add the soaked uncooked rice, yogurt, cilantro leaves and water. Water consistency should be just about the rice level. Too much water will be the pulav mushy.
- Pressure cook for 1-2 whistles.
Enjoy with some kind of homemade plant based raita. Make sure you add tempering of mustard seeds in your raita as we are supposed to have either mustard seeds or mustard seed powder with cooked cruciferous vegetables.
