Oil free Vegan Granola/Energy Bars

Ingredients:-

  • 2 cups of old fashioned oats (can be increased according to your preference)
  • 1/2 cup of pumpkin seeds
  • 1/2 cup of sunflower seeds
  • 1/4 cup of chopped almonds
  • 1/2 cup of chopped walnuts
  • 1 cup of flax seeds
  • 1/2 cup of chia seeds
  • 1/2 cup chopped dried apricots
  • 10-15 mejdool dates
  • 1/2 cup of black raisins
  • 2 tbsp seed or nut butter (optional)
  • 1 tsp cardamom powder
  • 1- 2 tbsp of cacao powder

Process:-

  • Roast oats, nuts, seeds separately and set aside
  • In a food processor chop the dates and raisins without any water
  • In a large mix all the ingredients to incorporate all the ingredients
  • Once mixed flatten it on a baking tray with parchment paper (I spread it on a silicon baking sheet). I used a flat bottomed bowl to flatten the dough. Keep dipping the flat side of the bowl in water before flattening the dough
  • Once completely flattened cut into desired shape and bake at 350F for about 15-20 mins. I baked it for about 18 mins
  • Let is cool before separating it out

Great as a snack while travelling or as a quick breakfast bar or anytime snack
