Oil Free Vegan Buddha Bowl

Ingredients for the bowl:-

  • 1 cup of red quinoa (wash and cook for 1 min in the instant pot)
  • 1 cup cubed cucumbers
  • 1 cup shaved carrot strips
  • 1 cup of roasted/airfried yam or sweet potatoes (tossed it in coconut aminos or soy sauce and air fried)
  • 1 cup of air fried tofu (tossed in coconut aminos or soy sauce, sriracha and then air fried)
  • 1 cup of chopped red cabbage
  • 1 cup of fresh spinach
  • 1 cup of chopped broccoli
  • 1/4 cup of cubed avocado
  • Cilantro
  • Pumpkin seeds

Ingredients for the dressing:-

  • 1 tbsp peanut butter or PB2 powder
  • 1 tbsp Sambal sauce
  • 1 tbsp coconut aminos or soy sauce
  • 1 tbsp maple syrup
  • 1-2 tbsp lime juice
  • 1 tbsp apple cider vinegar
  • 1 tsp garlic powder or finely chopped garlic
  • water to make the dressing
    • Mix all the ingredients to make the dressing (adjust the consistency by adding 1tbsp of water at a time)

Process:-

  • Roast yams and set aside
  • Air fry Tofu and set side
  • Cut all the veggies
  • Make the dressing
  • Assemble all the veggies and tofu as shown in the pic and drizzle with the dressing

Enjoy as any time kind of meal
