Vegan oil free Khandvi…(homemade soy yogurt)

Ingredients:-

  • 1 cup of Besan (Chickpea flour)
  • 1/2 cup of homemade soy yogurt
  • 1.5 cups of water
  • 2-3 tbsp of lemon juice (as plant based yogurts are not very sour)
  • Green chillies according to your preference (grind in to coarse paste)
  • 2-3 cloves of Garlic(grind into a coarse paste)
  • 1/2 tsp Turmeric
  • Salt to your preference

Process:-

  • Blend everything and transfer into a container. Ensure there are no lumps
  • Pressure cook inn the instant pot pressure for 12 mins
  • After 12 mins immediately release the pressure
  • Give the cooked batter a quick stir/whisk and spread it on silicon mats
  • Silicon mats helps to spread the dough smoothly without the need for any grind of grease
  • Cut and gently make rolls
  • Dry tempering is mustard seeds, sesame seeds – spread it all over the Khandvi rolls
  • Garnish with finely chopped cilantro.
