Ingredients for the Kofta:–
- 3 cups grated zucchini
- 1.5-2 cups chickpea flour
- 1 tsp rice flour1 boiled potato
- 1 small finely chopped onion
- 1 tsp garam masala
- Chilli powder according to your taste
- 1 tsp turmeric powder
- 1 tsp amchur powder
- 1 tsp ginger garlic paste
Process to Make the Kofta:-
- Mix all the above ingredients without adding any additional water as zucchini oozes out water naturally.
- Add more besan if you think the dough is very sticky.
- Form into balls and pan roast them (without any oil) in a nonstick appam pan (Pic and Video attached)
Ingredients for the gravy:-
- 3 small purple onions
- 3 large roma tomatoes
- 4 cloves garlic
- 1/2 inch of ginger
- 4-5 tbsp of pumpkin seeds or cashewnuts
- Roast the ingredients and blend into a puree
Process to make this dish:-
- Dry roast cumin seeds,
- 1 stick Cinnamon
- 1-2 leafs of bay leaf
- Add the blended tomatoe/onion puree
- 1 tbsp garam masala,
- 1 tsp amchur powder,
- 1 tsp chaat masala,
- Salt to your preference
- Chilli powder to your preference
- 1 tbsp corainder powder
- Simmer for 5-10 minutes
- Add the roasted koftas and simmer for another 2-5 minutes
- After you switch of the flame add crushed kasori methi leaves
- Garnish freshly chopped cilantro
