Oil Free Zucchini Koftas in creamy gravy

Ingredients for the Kofta:

  • 3 cups grated zucchini
  • 1.5-2 cups chickpea flour
  • 1 tsp rice flour1 boiled potato
  • 1 small finely chopped onion
  • 1 tsp garam masala
  • Chilli powder according to your taste
  • 1 tsp turmeric powder
  • 1 tsp amchur powder
  • 1 tsp ginger garlic paste

Process to Make the Kofta:-

  • Mix all the above ingredients without adding any additional water as zucchini oozes out water naturally.
  • Add more besan if you think the dough is very sticky.
  • Form into balls and pan roast them (without any oil) in a nonstick appam pan (Pic and Video attached)

Ingredients for the gravy:-

  • 3 small purple onions
  • 3 large roma tomatoes
  • 4 cloves garlic
  • 1/2 inch of ginger
  • 4-5 tbsp of pumpkin seeds or cashewnuts
  • Roast the ingredients and blend into a puree

Process to make this dish:-

  • Dry roast cumin seeds,
  • 1 stick Cinnamon
  • 1-2 leafs of bay leaf
  • Add the blended tomatoe/onion puree
  • 1 tbsp garam masala,
  • 1 tsp amchur powder,
  • 1 tsp chaat masala,
  • Salt to your preference
  • Chilli powder to your preference
  • 1 tbsp corainder powder
  • Simmer for 5-10 minutes
  • Add the roasted koftas and simmer for another 2-5 minutes
  • After you switch of the flame add crushed kasori methi leaves
  • Garnish freshly chopped cilantro
