Gluten free Oil free Italian Pasta salad

Ingredients for oil free dressing:-

  • 2 tbsp red wine vinegar
  • 2-3 tbsp lemon juice
  • 1-2 cloves of garlic finely chopped
  • 1 tsp dijon mustard (I did almost 1.5tsp)
  • 1 tsp Italian seasoning
  • Finely chopped fresh basil leaves
  • 2-3 tbsp aquaphaba (u can even more)
  • 1 tsp tahinj
  • Chilli flakes
  • 1 tsp garlic powder
  • 1 tsp maple syrup (u can add more if u like)
  • Salt to taste

Process:-

  • Boil the pasta shells as per the instructions on the box – cool and transfer into a large bowl
  • Cut veggies of your choice and transfer into the same large bowl
  • In a bowl prepare the oil free dressing by whisking all the ingredients for the dressing
  • Pour the dressing onto the cooked pasta and veggies
  • Set aside for 30 mins for the veggies and pasta to marinate with the flavorings of the dressing
  • Serve it cold
