Ingredients for stuffing:-
- 2 medium sized red potatoes
- 1 cup of chopped cilantro leaves
- 1/4 tsp Turmeric powder
- 1/4 tsp chilli powder or to taste
- 1 tsp stuffed paratha spice powder (available at any Indian store)
- 1/4 tsp Chaat masala powder (available at any Indian store)
- Salt to your preference
Ingredients for Roti(outer covering):-
- 2-3 cups of 100% whole wheat flour (I usually used King Arthur whole wheat flour)
- Salt to your preference (can be skipped also)
- 1/4 tsp crushed Ajwain seeds (Carom seeds)
- Hot Water to make soft dough
Process:-
- Mash the potatoes and mix the stuffing ingredients. Make balls and set aside.
- Make a dough with the outer layer ingredients
- Roll a small roti and place a ball onto it
- Cover as shown in the pic
- Gently using additional Whole wheat flour for dusting roll the paratha
- Roast the paratha on both sides multiple times – keep pressing using a spatula in order for the paratha to roast evenly
- Enjoy with homemade Soy yogurt, homemade oil free pickle
